Join us Thursday, October 15th for our Whole Hog processing class. Chris Combs will lead this event. The class will cover: breaking the hog down into the different cut of meat, will show all the cuts for pork chops, hams, bacon, baby back ribs, spare ribs, pork roast, pork steaks, and trimmings for sausage. Chris will also cover curing hams and bacon, making different types of sausage, and packaging meat for storage.

Products being used:

LEM Processing Equipment:  Grinder, stuffer, slicer, bacon hangers, and more.
Smokers and grills:  Camp Chef  products, Gateway Drum Smokers, Pit Boss vertical smokers, and Primo Grills.
